Yoghurt Pie

Yoghurt Pie1,5 appel // 175g cherries (and/or other preferred fruit) // 150g glutenfree flour // 1tbsp baking powder // 2 eggs // 35g coconut oil // 125g soy yoghurt // 12 drops of vanilla stevia (and/or up to 4 tbsp honey) // 0,5 tsp cinnamon

Put and mix all dry ingredients. Mix the oil, egg, yoghurt and stevia together. Add all together and bake in the oven for around an hour at 180C. Enjoy!

Healthy Orange Cacao Bar

First mix the dates and orange stevia . Add the rest to it, make bars, put them in the fridge and done! I prefer them with some coconut on top but they work fine without as well. Enjoy!

Mango & Passion Fruit Jam

mango and passion fruit jam1 passion fruit // 1 cup mango //1 tbsp chia seeds + 3 tbsp water

3-4 drops of stevia ( I used Orange NuStevia, which is one of my favorite flavors for when I want something more exotic or refreshing. You can find it here https://nunaturals.com/product/550) or 1 tbsp honey

First add the water to the chia seeds and let them be for a bit. Start by mixing the passion fruit and the mango. Add the stevia, or whichever sweetener you prefer, and the chia seeds and mix again. Then put it in the fridge and wait for around half an hour to an hour. Done! Enjoy!

Little tip: Use it on frozen yoghurt! Yum!

Fruit Cakes

gf breadpudding2 ripe bananas // 250 g apple sauce // 225 g rice flakes // 200 g of strawberries and /or blackberries (or whatever fruit you prefer) //1/2 tbsp cinnamon // 2-3 tbsp honey.

(optional: nuts and raisins)

Mix all together, put in a bake form, add some almond bits on top, and bake for around 55min at 180C. Enjoy!

Fig Cake

fig cake125 g dried figs // 1/2 cup water // 3 drops stevia

240 g rice flour // 110 g almond flour // 75 g honey // 100 g coconut oil // 4 tbsp water //  6 drops of stevia // 1/2 tsp vanilla extract

First make the fig paste, by mixing the dried figs with the half cup of water and a few drops of stevia. For the cookie dough, mix first all dry ingredients together and then add the rest to it. Spread it out in your preferred bake form. Make sure to press and divide it well on the bottom of the bake form. Add the fig paste on top of this layer and add another layer of the cookie dough on top. Put in the oven for 10 – 15min at 180C, let it cool down and all ready to devour! Enjoy! 🙂

Coconut – Date Cookies

coconut dates cookies120g glutenfree flour // 150g coconut powder // 1 egg // 75g honey // 50g coconut oil // 1tbsp baking powder // 5 dates

Mix all the dry components together. Melt the coconut oil and honey together. Mix the egg and cut the dates in little pieces (if you like them to be softer, let them soak in water for a night). Mix everything together. Drop on cookie sheet by tablespoonfuls and flatten slightly. Bake at 180C until they are a bit brown on the sides.

Oven Baked Potato

Oven baked potatoBoil medium sized potatoes in their peel for 40 – 50 min. Cook the veggies you want to add to the potato later for about 20min. Take the potatoes and cut them in half (not completely down, as you want them to stay together). Take some of the potato out with a spoon and start filling the 2 halfs up with the veggies. Add a mixed egg (if you want to keep it dairyfree) or Mozzarella on top. Spice it up with some salt and pepper. Put it in a preheated oven at 180C for around 20min. Enjoy!
